Part of our Rewilding Orchards range, where key ingredients are foraged from Devon's traditional orchards where wildlife and wildflowers are encouraged.
We handpick fresh elderflowers only on the sunniest of days in late May and June from hedgerows around old orchards in Torbay and Stoke Gabriel.
Bursting with the essence of summer, the flavour is an exciting infusion of citrusy, zesty lemon and wild fragrant elderflowers.
120 fresh lemons are hand squeezed by us into each barrel of Sparkling Elderflower Wine.
To create the perfect sparkle we use the classic method developed in the champagne region to produce a secondary fermentation in the bottle. Each bottle is then hand turned daily for 6 weeks before disgorging to remove the sediment.
